Beaujolais-Villages fra Dominique Piron fremstilles af vinstokke, der i snit er 50 år gamle. Druerne afstilkes delvist og gæres ved "semi carbonique" metoden, der sikrer vinene struktur og en smækker frugt, der giver mindelser om solbær og jordbær. Der er både struktur, stof og kompleksitet under frugten og et lækkert strejf af mineraler og hvid peber.
